Down Home Recipes

LIVERMUSH BITES
(Added August, 2006)


  • 1 cup self-rising flour
  • 2/3 cup cornmeal
  • 1 tablespoon sugar
  • 2 tablespoons vegetable oil
  • 1 large egg, lightly beaten
  • 1 cup buttermilk
  • 1 pound Mack’s Liver Mush, sliced and cooked
  • Vegetable oil for cooking

-- Cut Mack’s Liver Mush into slices, brown in pan, drain, set pieces to side.

-- Combine first three ingredients in large bowl.

-- Combine two tablespoons of oil, three eggs and buttermilk.

--Stir into flour mixture, mixing well.

-- Dip each piece of Mack’s Livermush into batter mixture, coating completely.

-- Pour oil to depth of three to four inches in Dutch oven.

-- Heat to 375 degrees.

-- Fry pieces until golden, turning once.

-- Drain on paper towels.

-- Serve immediately.
