MARIE’S COCONUT FRUITCAKE
(Added
October, 2003)
- 2 cups chopped nuts --- Pecans and Walnuts
- 1 ½ cups snipped Pitted Dates
- 1 cup candied Cherries
- 1 cup candied Pineapple
- ½ cup candied Orange peel
- ½ cup candied Lemon peel
- 2 cups sifted all-purpose White Lily Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 teaspoon ground Allspice
- ½ teaspoon ground Nutmeg
- ½ teaspoon ground Cloves
- 1 cup Butter
- ½ cup Sugar
- ½ cup Honey
- 5 Eggs
- 1/3 cup Orange Juice
- 1 cup Raisins
- 1 1/3 cups flaked Coconut

Shake nuts, dates and candied fruits in ¼ cup of the
flour.
-- Sift together the remaining flour, the salt, baking powder, and
spices.
-- Cream together the butter and the sugar.
-- Stir in the honey.
-- Beat in
eggs, one at a time, beating well after adding each egg.
-- Add the dry
ingredients to the creamed mixture alternately with the orange juice.
-- Stir
in raisins and coconut.
-- Pour the batter over the floured candied fruit
mixture.
-- Mix well.
-- Bake at 275 degrees for about 3 hours in a large loaf pan
or 2 small loaf pans.
