- Criollas Kiss Yo Mama Soup:
7 cups fresh corn, cut off the cob
½ cup roasted, peeled, chopped, poblano chiles
2 medium sized chipotle chiles, chopped
1 cup chopped yellow onion
3 cups milk
¼ cup butter, unsalted
1 cup chicken stock
½ pound sour cream
¼ cup fresh goat cheese
½ pound crawfish tails
1/8 cup chopped fresh chives
salt to taste
- Saute onion, corn, chipotles, and poblanos in butter
over medium heat for 5 minutes. Add chicken stock. Cover and simmer for 15 minutes. Remove
from heat and cool for 15 minutes. Puree mixture in a blender and strain through a medium
sieve, using a rubber spatula to retrieve as much as possible. Discard pulp. Add milk and
return to pot. Slowly bring to a boil. Reduce heat to simmer for 5 minutes, stirring
frequently. Remove from heat and stir in the sour cream and crawfish tails. Salt to taste
and serve. Garnish bowls with dollops of goat cheese and chopped chives. Makes about ¾
gallon.

- ORIGINAL POINT CONCH CHOWDER
2 Bags of Conch meat ground in food processor
4 cups diced carrots
4 cups diced celery
3 cups diced onions
4 cups diced potatoes
1 ½ oz. basil
2 oz. black pepper
6 oz. Worcestershire sauce
1 oz. seafood seasoning (I recommend Old Bay brand)
1 #10 can of tomatoes
1 cup sherry wine
- Add all the ingredients together;
stir until mixed; cook over medium low heat until vegetables are tender;
makes enough for a very large crowd. Enjoy!
